With its wicked little curve and pointed tip, the 2-3/4-inch blade of this specialty knife peels fruits and vegetables with delicate precision, removes blemishes, and shapes them as desired. Unlike longer top-grade Henckels knives, which are formed by a high-tech welding process, this knife is forged from a single piece of high-carbon stainless steel. Its handle has a full tang, and its synthetic grips are attached by three rivets. Although the knife is dishwasher-safe, it should be hand washed to protect its edge. It carries a lifetime warranty against defects.
